GNU Free Documentation License What is the origin of calling liquor "spirits?"? Q. I know that spirits are distilled rather than fermented and I know that once they get above a certain sweetner amount they are called liquours, but I was wondering where the origin of calling them "spirits" came from. Good question. but first the Fermentation is what produces the alcohol, yeast through a very complex process break down sugars and the byproduct of their consumption is the ethanol. Since the yeast can only produce up to around 20% alcohol it must be distilled. Distilling is kind of like a extraction process. Basically the 20% batch is heated. and the vapor is condensed and collected and Since alcohol and essential oils are more vol ital than water they are the first to be vaporized. I tried to explain it as simply as I could and I hope that makes sense.
